BEEF AND NOODLES 9-11-10 Top of page

1/2 pkg. egg noodles, cooked and drained
enough shredded beef and gravy to cover noodles
large can mushrooms, drained
1 can cream of mushroom soup
1 can non dairy creamer or milk
onion and garlic powder

Heat beef and gravy, add mushrooms. Saute with onion powder and garlic powder. Pour over noodles and heat through.

BROWNED BUTTER ICING 9-11-10

1/4 cup butter
2 cups powdered sugar
2 tbsps. cream
1 1/2 tsps. vanilla
2 tbsps. hot water

Melt butter, reduce heat and stir until golden brown. Remove from heat, blend in sugar, cream and vanilla. Stir in hot water and beat until cool or spreading consistency.

BISCUITS 9-11-10

2 cups self rising flour
8 oz. sour cream
2 sticks butter, melted

Mix together and put in ungreased muffin tins. 350° for 30 minutes.

BLACK BEAN CHOCOLATE BROWNIES 9-11-10

1 (19 oz.) can black beans
3/4 cup whole wheat flour
1/3 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup brown sugar
1 cup unsweetened applesauce
1/4 cup plain yogurt
2 teaspoons vanilla
1/2 cup dark or semi-sweet chocolate chips
1/2 cup coarsely chopped walnuts

Rinse black beans and measure out 1 1/4 cups of beans. (reserve any remaining beans for another use - you could add them to a salad.) Place beans in food processor and whirl to mash. Add flour, cocoa, baking powder, baking soda and brown sugar to the mashed beans in the food processor, and process to blend in. Add applesauce, yogurt and vanilla and whirl again to blend. Fold in chocolate chips and walnuts. Spray an 8 inch square baking pan with non-stick spray, and turn the brownie mixture into the prepared pan. Bake at 350 degrees F. for 25-30 minutes. Cool completely and cut into squares.

Note: The second time I made this I used 1/2 cup whole wheat flour and added 1/4 cup ground flax seed meal. This also worked out well, and added the heart healthy benefits of the flax seed.

DR. OZ MIDNIGHT BROWNIES (didn't give) 9-11-10

1 (15 oz.) can black beans, drained and rinsed
1/2 cup agave syrup
1/2 cup self-rising flour
1/2 cup egg whites
1/4 cup unsweetened cocoa
2 tbsp vanilla
1 tsp baking powder
6 tbsp mini semisweet chocolate chips

Preheat oven to 350°F. Lightly spray a 8×8 baking dish with nonstick cooking spray. In a food processor, mix all brownie ingredients (except chips) together. Chop on high, until smooth. Clean off sides and blend for another 20 seconds. Add the chips and stir well. Spread into the 8×8 baking dish. Bake for 20 minutes, until toothpick comes out clean. Cool for about 1 hour at room temperature.

BROWNIE FROSTING 9-11-10

6 oz. fat-free cream cheese
1/4 cup agave syrup
2 tbsp vanilla extract
2 tbsp semisweet mini chocolate chips, melted

With a whisk attachment on an electric beater, blend all ingredients until light and fluffy. Spread evenly over the top of the cooled brownies. In a microwave safe bowl, melt the 2 tbsp of chips with a 2-second spray of nonstick cooking oil. Using a spoon, swirl the chocolate on top. Allow it to set in the refrigerator for 20 minutes. Serve and enjoy. Don’t forget to have seconds!

BANANA OATMEAL CHOCOLATE CHIP (7-1-06, didn't give) 9-11-10

1 1/2 cups sifted flour
1 cup sugar
1/2 tsp. soda
1 tsp. salt
1/4 tsp. nutmeg
3/4 tsp. cinnamon
3/4 cup shortening
1 egg
1 cup ripe bananas
1 3/4 cup rolled oats
1 pkg. chocolate chips

Sift dry ingredients, cut in shortening. Add egg and bananas. Add oatmeal and chocolate chips. Drop by teaspoonful on ungreased cookie sheet. Bake at 400° for 15 minutes. Makes 3 dozen cookies.

ANGEL BARS (4-9-99 also called ANGELFOOD BARS) 9-18-10 Top of page

1 angel food cake mix
1 can lemon pie filling

Mix. Bake in non stick jellyroll pan. Bake at 350° for 15 minutes. Sprinkle with powdered sugar.

LEMON BARS (jul/aug81pg8, similar to above, didn't give) 9-18-10

1 package angel food cake mix (dry)
1 can lemon pie filling
1 cup coconut

Mix well. Bake in greased 9x13" pan. 30 minutes at 350°. Use powdered sugar frosting.

APPLE DESSERT 9-18-10

1-2 cans pie filling

Put pie filling into the bottom of an 8x8 pan. Use cinnamon roll dough from a tube, take the dough out of the tube and cut into pieces, lay them on top of the filling. Bake 15-20 minutes. Remove from pan, add frosting. Serve with ice cream.

CORN SALAD 9-18-10

2 cans whole corn, drained
1/2 cup chopped peppers
1/2 cup chopped onions
2 cups shredded cheddar cheese
1 cup miracle whip

Mix and refrigerate overnight. Just before serving, add crushed fritos chili cheese corn chips on top.

OATMEAL CRINKLES (Best of the Open Line cookbook pg80) 9-18-10

1½ cups sifted flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon soda
1 cup shortening
2 cups brown sugar
2 eggs
1 teaspoon vanilla
3 cups quick oatmeal

Sift flour, soda, salt and baking powder together. Cream shortening. Add brown sugar and continue to cream. Add eggs and vanilla and continue to beat well. Add sifted dry ingredients and the oatmeal. Chill dough. Form into balls the size of a walnut and roll in powdered sugar until heavily coated. Place 2 inches apart on a greased cookie sheet. Put a pecan half on top of each cookie. Bake in a preheated 375° oven for 8 to 10 minutes. Chocolate chips may be added or one of the following options; coconut; butterscotch chips; chopped dates or raisins; or candied fruit or gumdrops cut into small pieces. (Mrs. B. APPLE CRUNCH 9-18-10

1/4 cup butter
2 cups sliced apples
1 cup sugar
1 egg
1/2 tsp. vanilla
1 cup flour
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup black walnuts

Mix together all but apples and walnuts until well blended. Add apples and walnuts. Bake at 350° for 30-40 minutes.

CROCK POT BEEF AND NOODLES (3-29-08, didn't give) 9-18-10

2 cans beer
2 cans cream of mushroom soup
2 cans beef broth

Brown a 3-4 lb. beef roast. Place in crock pot with the beer and soup. Cook for 4 hours on high. Remove meat. Put noodles into crock pot. Cook the noodles. Tear up beef and put back in with noodles.
