TOMATOES AND DRESSING (5-31-03) 10-4-03 Top of page
6-12 tomatoes, scalded, peeled and
quartered
2/3 cup salad oil
¼ cup vinegar
¼ cup diced or sliced green
onions
1 tsp. salt
¼ cup green pepper, chopped
½ tsp. thyme
1 clove garlic, minced
Mix all ingredients except tomatoes. Add tomatoes and let sit in refrigerator over night.
SALTINE CRACKERS (may/jun81pg4) 10-4-03
1 cup flour
¾ cup lard
1 heaping teaspoon baking powder
1½ cups water
Mix like a pie dough. Roll as thin as possible. Cut into squares. Prick with fork. Lightly salt tops and bake at 375° for 7 minutes WATCH CLOSELY.
Request for Chicken Fried Steak with White Gravy With Breakfast Sausage in it. In this recipe I found online I would just add some breakfast sausage or use the recipe for SAUSAGE GRAVY given below.
COUNTRY FRIED STEAK WITH GRAVY 10-4-03
3 pounds sirloin tip roast
1 teaspoon salt, to taste
1 tablespoon white vinegar
3 cups unbleached flour
2 tablespoons pepper
vegetable oil, for deep frying
2 tablespoons unbleached flour
1 cup milk
¼ teaspoon salt
parsley, for garnish
Cut the meat into 1/2-inch thick slices. Pound the meat with a meat mallet to tenderize. Cut each slice crosswise into 3 pieces. Place in a large bowl. Cover with water and add the salt and vinegar. Marinate for 2 hours. Combine the flour and pepper in a plastic bag and add the meat, (do not pat dry) 1 piece at a time, shaking to coat thoroughly. Heat the oil in the deep fryer or deep large skillet, over medium heat, to 350 degrees. Add the meat in batches (do not crowd) and fry until light brown, about 30 seconds per side. Drain the meat on paper towels and place it on a heated platter that has been tented with foil.
For the gravy, pour off all but
2 tablespoons of the oil in the skillet, leaving the browned bits. Heat
over medium heat and add the flour, stirring and scraping up all of the
browned bits for 3 minutes. Remove from the heat and gradually whisk in
the milk. Stir in the salt and continue to whisk until thickened, about
1 minute. Serve over the steaks and garnish with parsley just before serving.
Serves 8.
SAUSAGE GRAVY 10-4-03
Crumble ¼ pound bulk sausage in skillet. Fry until fully cooked but not browned. Add 1 cup flour, slowly, stirring continuously over medium-high heat, until well mixed but not browned. Slowly add milk until you reach desired consistency. If too thick, add a bit of water. Add a dash or two of black pepper for flavor.
SWEET CARROT SOUFFLE (7-19-03) 10-4-03
2 lbs. peeled carrots, cut in half
¾ cup sugar
2 tbsps. flour
1½ tsps. baking powder
1½ tsps. vanilla
3 large eggs at room temperature
¼ cup butter, softened
1½ tbsps. sugar
whipped cream
Cover carrots with water and bring to a boil. Reduce heat to medium. Cook 30 minutes until very tender and drain. Preheat oven to 350°. Puree carrots in food processor with the ¾ cup sugar, flour, baking powder and vanilla. Add eggs, one at a time, pulsing after each addition. Add butter. Mix well. Lightly grease 1½ quart souffle dish. Coat bottom and sides with the 1½ tbsps. of sugar. Add carrot mixture and bake for 45 minutes, until center is set. Serve with whipped cream.
MARSHMALLOW DESSERT (8-9-03) 10-4-03
Spray a 9x13" with pam spray. Put 2 cups miniature marshmallows on bottom. Prepare a strawberry cake mix as directed. Pour over marshmallows. Mix 2 pkgs. frozen strawberries, partially thawed and 1 large pkg. dry strawberry gelatin. Mix and pour over cake mix. Bake at 350° for 45-50 minutes. (Time and temperature will vary, watch closely.)
SIDE DISH CARROT SOUFFLE (7-19-03) 10-4-03
2 lbs. carrots, cooked and mashed
1 cup cracker or corn flake crumbs
1 cup milk
¾ cup grated sharp cheddar
cheese
¾ cup soft butter
¼ cup grated onion
1 tsp. salt
¼ tsp. pepper
3 eggs
Combine all except eggs. Beat eggs until frothy and fold into carrot mixture. Pour into 10x6 dish. Bake at 350° for 40-45 minutes.
CROCK POT ITALIAN BEEF (may/jun98pg2) 10-4-03
2-3 lb. Roast (cut and type of meat your choice)
Brown the meat on both sides in
skillet. Put meat in crock pot and add:
1 can beer
1 can beef broth
1 jar pepperocini (yellow peppers)
1 pkg. Good Seasonings Italian
Dressing mix (dry)
Cook on low for 7-8 hours.

2 cups flour

¼ cup butter
½ cup buttermilk with 1
egg mixed in
Sift dry ingredients into bowl. Cut in butter until it resembles meal. Stir buttermilk and egg mixture in and mix well. Knead on lightly floured surface for about five minutes. Roll to 1/8 inch thickness and put on buttered baking dish. Cut into 2 inch squares. Prick with fork and bake at 400° for 12 to 14 minutes. Remove from oven, break apart and set out to cool.
CROCKPOT FRENCH DIP SANDWICHES (3-10-99) 10-4-03
5 lb. rump roast or brisket
1 can beer
1 can beef broth
1 envelope onion soup mix
Put meat in crockpot; top with other ingredients; cook on high for 5 hours. Serve on hoagie buns.
HOW TO FREEZE POTATOES 10-11-03 Top of page
Select smooth new potatoes directly from the garden. Peel or scrape and wash. Water blanch 3-5 minutes, depending on the size. Cool, drain and package whole or cut up, leaving ½ inch headspace in the jar, seal and freeze.
Parboil until almost clear. Drain off, cool. Shred with a shredder like hashbrowns. Put on cookie sheet however thick you want. Score with spatula. Freeze hard. The next day take them apart and stack in a double bread wrapper and freeze. When you want to cook them and fry like hash browns.
Bake potatoes, cool and shred. Put in plastic freezer bags and freeze.
Parboil in salt water, do not cook too long. Shred and form into hamburger like patties and freeze.
Peel, cut into shape, paper towel dry. Place on nonstick cooking sheet on nonstick paper. Freeze, roll off into bags for freezer.
Question about using soy milk as
a replacement for regular milk in cake. 10-11-03
You can't make pudding or pumpkin
pie with soy milk. Regular milk has an ingredient that soy milk is lacking
that is glue-like.
COUNTRY APPLE SQUARES 10-11-03
2 cups flour
1 cup brown sugar
1 cup chopped pecans
Cut in ½ cup butter, until resembles coarse crumb. Reserve 2 cups mixture. Press remainder into greased 9x13 pan.
1 8 oz. package softened cream cheese
2 tbs. milk
1 egg
¼ cup sugar
1 tsp. vanilla
Cream and pour over crust.
3½ cups chopped apples
Cover filling with apples. Top with remaining crumb mixture. Bake at 350° for 30 minutes.
SOUTHWESTERN BEER BATTER ONION RINGS 10-11-03
2 large sweet onions
2 eggs
1¾ cups all purpose flour
2 teaspoons salt
2 teaspoons chili powder
2 teaspoons cayenne pepper
1 teaspoons sugar
1 teaspoons garlic powder
1 teaspoons ground cumin
1 cold can beer
¼ teaspoon Tabasco
oil for deep-fat frying - heat
to 375 degrees
2 medium mixing bowls
Cut onions into ¼" slices, separate into rings. Place in medium bowl, set to the side.
In the other mixing bowl, sift together
dry ingredients.
** Note: the dry mixture will smell
like you will want the fire department on standby - but the onion rings
really will not taste that spicy. Once dry ingredients are mixed, add the
2 eggs, tabasco, and beer. use mixer to beat into smooth batter. for thicker
batter, use less beer.
Dip onion rings into batter, then drop into oil a few at a time and cook for 1 to 1½ minutes or until golden brown. Makes 8 servings.
Alternate way to make:
If you want a "light", batterless mix, do not mix in the beer or Tabasco.
Combine eggs in a small bowl and set to the side. combine all dry ingredients in the 2nd mixing bowl as before. dip onion rings in egg mixture, then drop into dry mixture and cover. Then drop onion rings into hot oil and complete as above.
HOW TO FREEZE APPLE SLICES 10-11-03
To prevent darkening, dissolve ½ tsp. ascorbic acid in 3 tbps. water and sprinkle over fruit. Or you can steam blanch for 1½ to 2 minutes. Place on a tray and freeze, once frozen pack into containers and freeze.
Measure out how many cups for a pie or applesauce and freeze in a sack after soaking in salt water or ascorbic acid water.
Make up the apple pie filling, double wrap it and freeze.

CREAMY PICNIC COLESLAW W/FATFREE MAYO (didn't give 3-11-99) 10-11-03
1 cup Kraft fat free mayonnaise
1/3 cup sugar
1 tsp. prepared mustard
1 tbsp. white vinegar
1 tsp. celery seed
6 cups cabbage
Mix all except cabbage well. Add cabbage mix again.
SUGAR FREE CHOCOLATE TEA COOKIES 10-18-03 Top of page
¼ cup shortening
3 tbsps. granulated artificial
sweetener
1 egg
½ tsp. vanilla extract
2 tbsps. skim milk
1¼ cups flour
1 oz. square unsweetened chocolate
Cream shortening, artificial sweetener, egg, vanilla and milk. Blend well. Add ½ the flour, mix well. Stir in chocolate add remaining flour. Press into an ungreased cookie sheet with a cookie press or roll into balls with floured hands. Bake at 350° for 20 minutes.

PRESSURE COOKED SWISS STEAK 10-18-03
3-4 lbs. round steak, 2 inches thick
½ cup flour
Salt and pepper to taste
2 tbsps. fat or lard
1 onion, sliced
1 green pepper, diced
½ cup tomato juice
Pound seasoned flour into meat. (If you don't have a meat tenderizer, you can soak meat in egg and dip in flour.) Brown the meat in fat at the bottom of the cooker. Add onion, peppers and tomato juice. Cook for 25 minutes at 15 lbs. pressure.
DIABETIC SPICE COOKIES 10-18-03
1¼ cups water
2 cups raisins
1/3 cup shortening
½ tsp. nutmeg
2 tsps. cinnamon
Combine and boil for 3 minutes. Turn into mixing bowl to cool. In a new bowl, combine the following:
½ tsp. salt
1 tsp. soda
1 tsp. baking powder
2 cups flour
¼ cup sugar twin
Add 2 eggs to 1st mixture when cool 1 at a time and beat. Add 1 tsp. vanilla. Add flour mixture. The batter will be cake-like and hard to drop onto greased cookie sheets. You can spread the batter over a greased cookie sheet and bake then cut into bars. Bake at 350° for 8-10 minutes. Do not overbake. Makes 2½ dozen.
POPEYE SPINACH DIP (New American Diet book) (nov/dec89pg6) 10-18-03
10 oz pkg. frozen, chopped spinach
¼ pkg. dry vegetable soup
mix
1¾ cups plain low fat yogurt
¼ cup imitation mayonnaise
8 oz. can water chestnuts, drained
and chopped
2 tbsps. chopped green onions or
chives
Thaw spinach, drain and squeeze until fairly dry. Stir dry soup mix before measuring, to ensure that it is evenly mixed. Mix all ingredients together when spinach is ready. Chill and serve with raw vegetables. Makes 4 cups. NOTE: For an unusual serving dish, slice top off a round loaf of unsliced sourdough bread and hollow out inside. Fill with cold dip. Save insides to use for bread crumbs, or cube and use for dipping. Source: New American Diet.

DIABETIC SALAD 10-18-03
Sugar free orange jello in a 1 quart bowl. Take about 15 baby carrots and 2 apples and grind them up. Throw it all in with a handful of raisins. Let set up in the refrigerator.
COOKED HOMEMADE ICE CREAM (jun63pg2) 10-18-03
Beat 4 eggs till thick. Add 2 cups sugar, 1½ -2 tablespoons cornstarch and a dash of salt.
Add this mixture to 1½ quarts of milk, bring to a boil and cook till thick.
Pour the cooked pudding into freezer and add more milk (suggest 2 cups of cream plus milk) to about 3 inches from the top of the freezer. Add about 8 tbsps. of vanilla and freeze. (The large amount of vanilla is really the secret to making the ice cream something to rave about.)
This is also good as chocolate ice cream. Add 4 tablespoons cocoa to the sugar and mix it well before adding to the beaten eggs. It still requires the 8 tablespoons of vanilla. (Mrs. Beuford Barnhart, Colesburg, Iowa)
