MICHELLE'S GLUTEN-FREE GOULASH (From michellependergrass.com Winner of Czech Village Fall Festival Goulash Contest)  11-16-13 Top of Page

2-3 pounds beef roast (venison can also be used or a mixture)
paprika
coconut oil or bacon grease (or a little of both)
a few good sized yellow onions
a head of roasted garlic
a few roasted peppers, green, red, hungarian and jalapenos
a pint of hatch chile peppers (can use a can of green chilies)
2 quarts tomatoes
2 quarts beef stock
fresh ground caraway seeds, grind with mortar and pestle
marjoram
cayenne pepper
pink himalayan salt
fresh ground black pepper

Cube toast, coat in paprika. Melt a couple of tablespoons of oil and sear the meat. As the small batches are finished, put in a stew pot. While searing meat, roast peppers and garlic. Once all the meat is finished searing, in the same pan add more oil and carmelize the onions. Put the onions into the stew pot and deglaze the meat/onion pan with some stock. Pour all into stew pot. Add the rest of ingredients and bring to a boil, then reduce heat to low simmer for a few hours.

S'MORES CUPCAKES (From bettycrocker.com) 11-16-13

1 box super moist yellow cake mix
1 1/4 cups water
1/3 eggs
1 cup graham cracker crumbs
4 bars milk chocolate candy, finely chopped
1 jar (7 oz.) marshmallow creme
1/2 cup butter or margarine, softened
2 cups powdered sugar
1-2 tsps. milk
1 bar milk chocolate candy, if desired
26 bear shaped graham crackers, if desired

Heat oven to 350°. Put paper cups into muffin tin. Make batter according to package. Fold in graham cracker crumbs, chocolate bars. Divide evenly. Bake for 18-23 minutes. Cool in pans for 10 minutes. Move to cooling rack. Beat marshmallow creme, butter and powdered sugar on low speed until well blended. Beat in enough milk, 1/2 tsp. at a time, to make frosting spreadable. Divide chocolate bar into rectangles. Cut each rectangle diagonally in half and place on top of each cupcake. Top each cupcake with bear-shaped cracker. After frosting has set, store loosely covered.

1 can sweetened condensed milk
12 oz. semi-sweet chocolate chips
1 tsp. vanilla
3 Milky Way candy bars, cut into chunks

Microwave together and pour into 9x9 buttered dish.
