40 marshmallows = 2 cups of marshmallow creme

DIVINITY (with marshmallow cream jan/feb76pg3, didn't give) 1-7-06

2 cups sugar
½ cup water
2/3 cup marshmallow cream
1/8 tsp. salt
2 egg whites
1 tsp. vanilla
OPTIONAL: nut halves or candied cherries

Combine sugar, water and marshmallow cream in saucepan. Heat, stirring until the sugar is dissolved. Cook without stirring until the mixture forms hard bails. Just before this time, beat the egg whites until stiff. When syrup is ready, remove from heat and pour slowly over the egg whites, stirring constantly. Beat until the gloss disappears and the candy becomes dull. Add vanilla. Drop by teaspoonfuls
on to wax paper. Top with cherry or nuts.

DIVINITY (uncooked jan/feb76pg3, didn't give) 1-7-06

1 7 oz. jar marshmallow cream
3 Tbsp. water
2 cups sifted powdered sugar
½ cup chopped nuts
1 tsp. vanilla

Put in a bowl, the marshmallow cream, water and vanilla, and beat until stiff peaks form. Fold in BY HAND the powdered sugar, flavoring and chopped nuts. Drop onto wax paper. Let set until firm (may add color).

CHICKEN TERRIFIC (nov/dec97pg1, didn't give) 1-7-06

Crust:
8 ozs. seasoned stuffing mix
½ cup margarine, melted
1 cup chicken broth

Spread half this mixture in a 9 x 13" dish.

Filling:
2½ cups diced, cooked chicken
1 tsp. salt
½ cup chopped onion
½ cup chopped celery
½ cup mayonnaise
2 eggs
½ cup milk
1 can cream of mushroom soup
1 cup shredded cheese

Combine the first 5 ingredients and spread over crust. Cover with remaining stuffing mixture. Mix eggs and milk. Pour over stuffing and refrigerate overnight. Spread with soup and bake 1 hour at 350°. The last 10 minutes, sprinkle with cheese and bake until browned.

HOT COCOA MIX 1-7-06

1 pound box nestle quik or hershey's chocolate
1 8 quart box of dry milk powder
1 6 oz. jar instant coffee creamer
1 cup powdered sugar

Add 1/3 cup of mix to cup of hot water.

HOT CHOCOLATE MIX (feb67pg4, didn't give) 1-7-06

8 quart box of powdered milk
1 79¢ box Nestle's Quik
1 seven ounce jar Pream
1 cup powdered sugar

Mix well by stirring together. Use four teaspoons to a cup of hot water for hot chocolate drink.

HOT CHOCOLATE DRINK 1-7-06

14 oz. can sweetened condensed milk
1/2 cup cocoa
1 1/2 tsp. vanilla
1/8 tsp. salt
6 1/2 cups hot water

Milk, cocoa, vanilla and milk in saucepan and mix well. Slowly stir in water. Heat through, stirring occasionally but don't boil. Will keep for 5 days in the refrigerator.

COCKTAIL SMOKIES (12-31-05) 1-7-06

2 16 oz. packages smokies
2 cans 21 oz. cherry pie filling
1 20 oz. can pineapple tidbits, drained
3 tbsps. brown sugar

Put everything except smokies in crockpot. Cook on low, covered for 4 hours.

CHICKEN DISH 1-7-06

Chicken breasts
Cream of chicken soup
cream of onion soup
a little milk

CHICKEN CORDON BLEU (nov/dec77pg3, didn't give) 1-7-06

6 whole medium breasts (skinned and boned)
1 8 oz. package sliced Swiss cheese
1 6 oz. package sliced cooled ham
3 tablespoons flour
1 teaspoon paprika
6 tablespoons butter or margarine
1 cup water
1 chicken bouillon cube
1 cup heavy or whipped cream
1 tablespoon cornstarch

Fold cheese and ham slices to fit onto flattened breasts. Roll and fasten with toothpicks. On waxed paper or in small bowl, mix flour and paprika. Roll chicken to coat. Over medium heat, cook chicken in butter until browned. Add water and bouillon cube; heat to boil. Reduce heat to low and simmer 30 minutes until tender. Arrange chicken on platter, removing toothpicks. In small saucepan,
combine cream and cornstarch. Gradually stir into drippings. Cook until thickened. Serves 6.

COMPANY CHICKEN 1-7-06

6 chicken breasts
6 slices swiss cheese
1 can cream of chicken soup
1 box chicken stovetop stuffing, prepared
1/4 cup melted margarine

Put chicken into 2 quart dish. Layer with cheese, soup and stuffing. Pour melted margarine over stuffing. Bake covered at 300° for 2 hours. Uncover the last 15 minutes.

SCALLOPED CORN (jan67pg3, didn't give) 1-7-06

2 eggs
2/3 cup milk
16 soda crackers
1 can cream corn
1 tablespoon sugar
Salt and pepper
4 slices Old English Cheese
3 tablespoons melted butter

Beat eggs and add milk and soak crushed crackers in this mixture. Add corn, sugar, salt and pepper. Cut cheese in chunks and mix with corn. Pour into greased casserole. Top with toasted bread chunks (like Pepperidge Farm makes) and melted butter. Bake 45 minutes at 350°.

MEATLOAF 1-7-06

1 1/2 pounds ground beef
8 oz. can tomato sauce
2/3 cup uncooked oatmeal
3 eggs
1 tsp. salt
1/2 tsp. onion salt
1 fresh onion
1/2 tsp. sage
dash of pepper
ketchup and tomato sauce (Spread evenly over top in bread pan)

Bake at 350° for 45 minutes or until it tests done.

MEAT DISH 1-7-06

1 pound ground beef, browned and drained
3/4 pound bacon, fried and crumbled
1 cup chopped onion
2 15 oz. cans pork and beans
1 15 oz. can kidney beans
1 15 oz. can lima butter beans
1 tsp. salt
1/2 tsp. pepper
1 cup ketchup
1/4 cup brown sugar
3 tbsps. white vinegar

Brown and drain beef. Brown bacon and saute onions in grease, drain well. Add the rest into a crockpot and stir. Cover and cook over low heat for 4-6 hours.

APPLE SAUCE 1-28-06 Top of page

3 pounds of favorite cooking apple, peeled, cored and cut into chunks Place in pressure cooker.  Add one peeled pear cut into chunks.

1 cup apple juice
1 tbsp. cinnamon
1/2 cup sugar, or to taste

Bring up pressure, cook approximately 3 minutes. Let pressure drop. Mash with potato masher to desired consistency. (Be very careful with the pressure so that the apples do not clog the vent holes)

HOT CORN DIP 1-28-06

1 can corn, red and green peppers included
8 oz. package pepper jack cheese
1/2 cup parmesan cheese
3/4 cup mayonnaise

Mix together and put in a pie tin. Bake at 350° for 15-20 minutes. Serve with corn chips or tortilla chips.

KETTLE KORN (nov/dec96pg3) 1-28-06

1/3 cup popcorn
¼ cup water
3 tbsps. bacon drippings
1/3 cup sugar

Combine popcorn and water. Melt drippings in a cast iron pan. Stir sugar into hot drippings. Quickly add popcorn and water to skillet. Cover and pop fast over high heat, stirring or shaking constantly.

APPLESAUCE IN CROCKPOT (sketchy recipe, did not give amount of apples) 1-28-06

Do not add sugar. Put 1 cup water in 5 quart crockpot. Put 2 wooden spoons over the top of the crock pot and cover with a paper towel. This way the apples that are cooking won't splatter.  Start on high, then turn to low and cook overnight. When it cooks down to the right consistency, then use a potato masher or electric mixer to blend. Add sugar and cinnamon according to taste. Put into pint jars and hot water bath for 20 minutes.

BORDENS FOOL PROOF DARK CHOCOLATE FUDGE (12-10-05) 1-28-06

3 cups semi-sweet chocolate chips
1 14 oz. Eagle Sweetened Concensed Milk
dash salt
1 cup shelled walnuts, chopped
1 1/2 tsp. vanilla extract

In heavy saucepan over low heat, melt chips with sweetened condensed milk and satl.  Remove from heat, stir in walnuts & vanilla.  Pour into 8" waxed paper lined pan (or buttered pan) and chill 2 hours.

MILKY WAY FUDGE (12-10-05) 1-28-06

1 can sweetened condensed milk
12 oz. semi-sweet chocolate chips
1 tsp. vanilla
3 Milky Way candy bars, cut into chunks

Microwave together and pour into 9x9 buttered dish.

KETTLE CORN 1-28-06

Stir crazy popcorn maker. 1/3 cup oil, 1/3 cup sugar, 1/2 cup popcorn. Pop as usual.

SUGAR CORN or KETTLE CORN 1-28-06

1/4 cup oil
1/2 cup popcorn
3 tbsps. sugar sprinkled on top

FANCY BREAD PUDDING (2-8-00) 1-28-06

3 eggs, beaten
3/4 cup sugar
1 can evaporated milk
1 cup milk
1/4 tsp. nutmeg
1/4 tsp. cinnamon
6 cups bread cubes
1 can apple pie filling
1 cup raisins

Combine eggs, sugar, milks and spices. In 3 quart casserole. Stir until blended. Add bread, apples, and raisins. Let stand a couple minutes. Set microwave on 50% power for 15-20 minutes or until knife inserted in center comes out clean. Can also bake in oven. Put in a greased 3 qt. casserole dish. Bake 350° 55-60 minutes.

BREAD PUDDING 1-28-06

3/4 cup dark brown sugar
3 slices whole wheat bread
2 tbsps. butter
1/2 cup raisins
3 eggs
1 1/4 cup evaporated milk
1/4 tsp. salt
1 tsp. vanilla

In a 1 quart casserole combine sugar, bread and raisins. Mix eggs, milk, salt and vanilla. Pour over bread mixture. Lightly blend. Microwave on high covered for 8-10 minutes. (Watch carefully, as this is an older microwave recipe) Rotate your dish 1/4 turn after 1/2 cooking time. Brown sugar forms sauce to serve with the pudding. Rest for 10 minutes.

SIMPLE FUDGE 1-28-06

1 can ready to spread frosting, chocolate
1 12 oz. package chocolate chips

Melt over low heat. Spread in greased 8x8" pan. Let it set up.

HEATH BITE BARS 1-28-06

1/2 cup butter
1 cup sugar
1/2 cup brown sugar
1 tsp. vanilla
2 eggs

Beat together.

Add 1 1/2 cups flour
1 tsp. baking powder

Mix well and stir in 1 bag heath bits.

Bake at 350° for 30 minutes. Frost with chocolate frosting.

5-MINUTE FUDGE (12-10-05) 1-28-06

3 cups semi-sweet chocolate morsels
1 can sweetened condensed milk
1/4 cup butter, in pieces
1 cup chopped walnuts

In a 2-qt microwave-safe bowl, combine chocolate, milk and butter.  Microwave at 50% power for 4-5 minutes, stirring about every 90 seconds.  Stir in walnuts. Pour into a buttered 8" square dish.  Chill at least 2 hours.

CHOCOLATE FUDGE (12-10-05) 1-28-06

1 12 oz. pkg chocolate chips
1 6 oz. pkg chocolate chips
1 can sweetened condensed milk
1 tsp vanilla
nuts of choice

Spread into pan and let cool, cut into pieces.
