CROCK POT BEEF AND NOODLES (3-29-08) 2-7-09 Top of page

2 cans beer
2 cans cream of mushroom soup
2 cans beef broth

Brown a 3-4 lb. beef roast. Place in crock pot with the beer and soup. Cook for 4 hours on high. Remove meat. Put noodles into crock
pot. Cook the noodles. Tear up beef and put back in with noodles.

QUICK AND EASY POPCORN SNACK (1-31-09) 2-7-09

4 bags butter flavored popcorn
2 cups dry roasted peanuts
2 cups m&m's
1 pkg. white almond bark

Melt almond bark and pour over remaining ingredients. Coat. Let cool and break apart.

Variation of above (received 2-14-09)

Kettle corn
corn chex
knotted pretzels
cashews
pecans

Toss together and spread on a single layer on parchment paper. Drizzle with melted almond bark.

CINNAMON APPLESAUCE SALAD 2-7-09

1 cup hot water
2/3 cup red hots candies
2 pkgs. (3 oz.) lemon gelatin
1 1/2 cups sweetened applesauce

Pour hot water over candies. Heat and stir until candy is dissolved. Add gelatin. Stir until dissolved. Stir in applesauce. Pour half of mixture into pan or mold. Chill well until firm.

Filling:

1 8 oz. pkg. cream cheese
1/2 cup chopped nuts
1/2 cup finely cut celery
1/2 cup mayonnaise

Mix and spread over the firm layer of the gelatin. Pour remaining gelatin mixture over top.

CARAMEL RICE KRISPIE BARS 2-7-09

1/2 cup butter or margarine, reserving half
8 cups miniature marshmallows, reserving half
12 cups rice krispies cereal, reserving half
1/2 cup butter or margarine
14 oz. pkg. caramels
14 oz. can sweetened condensed milk
6 oz. pkg. semi-sweet chocolate chips

In large saucepan, melt 1/4 cup margarine with 4 cups marshmallows. Add 6 cups of cereal. Stir until coated. Press mixture into buttered 15x10x1" baking sheet.

In saucepan over low heat, melt butter, caramels, and condensed milk. Stir until caramels are melted. Spread over top of cereal mixture in pan. Sprinkle with chocolate chips. Spread lightly with spatula.

Melt remaining butter with remaining marshmallows. Add remaining cereal. Stir until coated and press evenly over top of the caramel layer. Makes 35 bars. Bars freeze well.

HEALTH BREAD (Noel's grandmother 1-24-09) 2-7-09

1 cup oatmeal
1 cup whole wheat flour
1 cup all bran
1 tsp. salt
3/4 cup sugar
1 egg
1 tsp. soda in 1 cup of sour or butter milk
1 cup raisins, plumped (put in water to plump them)

Mix all ingredients until just blended. Put in loaf pan and bake for 1 hour at 350°. When removed from oven, slice and put a thin layer of
butter and a slice of cheddar cheese and wrap in waxed paper.

PEANUT COOKIES 2-14-09 Top of page

1 cup shortening
1 cup sugar
1 cup brown sugar
1 cup oatmeal
1 cup corn flakes
2 cups sifted flour
1 tsp. baking soda
1 tsp. baking powder
2 eggs
1/2 pound salted peanuts with red skins

Cream shortening, sugars and eggs. Add dry ingredients. Mix thoroughly. Drop by teaspoon on greased cookie sheet. Bake at 350° for about 12 minutes or until golden brown. Can do 1/2 cup shortening and 1/2 cup margarine.

BETTER THAN SEX CAKE (1-17-09) 2-14-09

1 german chocolate cake mix
1/2 can sweetened condensed milk
1 jar caramel ice cream topping
1 8 oz. cool whip
2 heath bars

Make cake mix according to mix directions. Let cool. Poke holes in the cake. Pour milk over cake. Pour 1/4-1/2 of the caramel topping over top. Cool completely. Cover with cool whip. Sprinkle heath bars over it and drizzle the remaining caramel topping.

TUNA CASSEROLE 2-14-09

3 cups cooked rice
1 1/2 cups drained tuna
1 can cream of chicken soup
1 cup evaporated milk
1/2 cup chopped celery
1 cup cooked green peas
1/4 cup finely chopped onions
1 tsp. WOR sauce
3/4 cup shredded cheese

Combine all ingredients except the cheese. Pour into greased 1 1/2 quart casserole dish. Top with cheese and bake at 350° for 35 minutes.

1 cup oatmeal
1 cup whole wheat flour
1 cup all bran
1 tsp. salt
3/4 cup sugar
1 egg
1 tsp. soda in 1 cup of sour or butter milk
1 cup raisins, plumped (put in water to plump them)

Mix all ingredients until just blended. Put in loaf pan and bake for 1 hour at 350°. When removed from oven, slice and put a thin layer of butter and a slice of cheddar cheese and wrap in waxed paper.

RAISIN FILLED COOKIES 2-14-09

1 cup sugar
1/2 cup margarine
1 egg
1/2 cup milk
1 tsp. vanilla
2 tsps. cream of tartar
1 tsp. baking soda
2 1/2 - 3 cups flour

Mix together.

1 cup raisins
1 cup sugar
1 tbsp. flour
1/2 cup water

Cook until thick. Roll out cookies thin. Cut them with round cookie cutters. Place 1 tbsp. of filling on a cookie, put another cookie on top and pinch to seal. Bake on greased cookie sheets at 350° for 10-15 minutes.

RAISIN FILLED COOKIES (didn't give, jan/feb82pg4) 2-14-09

Filling:

1 cup raisins
1 cup nuts, chopped
1 cup water
1 cup granulated sugar
2 heaping teaspoons butter
2 heaping teaspoons flour

Mix and cook till thick.

Cookie:

1 cup brown sugar
½ cup butter
1 egg
½ cup milk
3½ cups flour
2 teaspoons cream of tartar
1 teaspoon soda
1 teaspoon vanilla

Mix as for dough. Roll out thin (Do Not use too much flour on board.) Cut as for large cookies. Use 2 pieces, placing filling in middle. Crimp edges. 350° till done (about 8-10 minutes).

RAISIN FILLED COOKIE (didn't give, jan/feb95pg7) 2-14-09

1 cup sugar
½ cup lard
1 egg
½ cup milk
1 tsp. baking soda
2 tsp. baking powder
1 tsp. vanilla
3½ cups flour

Combine, roll out & cut.

1½ cups raisins or dates, chopped
1 Tbsp. flour
½ cup sugar
1 cup water

Combine, cook until thick and cool. Divide filling among half the cookie cut outs. Top with remaining cut outs and seal. Bake at 375-400° until lightly browned.

RAISIN FILLED COOKIES (didn't give, nov/dec82pg1) 2-14-09

2 scant cups sugar (1 cup white, 1 cup brown)
¾ cup shortening
½ teaspoon salt
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda (Dissolved in small amount of vinegar)
1 cup sweet milk
3 teaspoons baking powder
flour to make dough manageable

Filling:

1 pound raisins, grind in food grinder
1 cup sugar
1 cup water
2 tablespoons flour
1 teaspoon vanilla

Combine sugar, shortening, and salt. Mix till creamy. Add eggs, vanilla, baking soda, milk, baking powder, and flour. Refrigerate overnight. For filling: cook raisins, sugar, and water over low heat for 5 minutes. Thicken with flour and add vanilla. Cool. Roll out dough ¼ inch thick. Dip cutter in sugar. Make small as they will double when baking. Place 1 tablespoon filling in center and cover with another cookie. Crimp edges to seal. Beat egg in small container and with pastry brush, brush each cookie. Bake 350° 10 minutes or till light brown.

PARTY CHICKEN mar/apr82pg3 (Noel's Grandmother) 2-21-09

8 boned chicken breasts
8 slices bacon
4 oz. chipped beef, cut into small pieces
1 can cream of mushroom soup
1/2 pint sour cream

Cover the bottom of a 9x13" greased pan with the chipped beef. Wrap each chicken breast with a piece of bacon. Place the chicken breasts on top of the beef. Mix soup and sour cream and pour over the top. Bake uncovered at 275° for 3 hours. Can also add some white wine.

TUNA CASSEROLE (2-14-09) 2-21-09

CORNISH HEN 2-14-09

Can roast at 350°. Could also put onion, carrots, celery, and garlic in a pan and fry it up. Put it in a pan. Put a seasoned hen on top of the base of vegetables. Baste with butter and drop with white wine cover with foil. Bake at 350° 15 mins. Remove foil and bake another 10 minutes. You can season bread cubes or rice with thyme and/or tarragon. Best way to prepare the stuffing with a hen would be making the stuffing on the side.

ARIZONA LEMON PIE (11-01-08) 2-28-09

1 large lemon, ends removed, cut into 8 pieces and take out seeds

Put in blender and blend for 30 seconds.

1 1/2 cups sugar
4 eggs
1 stick butter, cut into small pieces
1 tsp. vanilla

Blend well in blender. Pour into 9 inch unbaked pie shell. Bake at 350° for 40-50 minutes.

BRAN MUFFINS (Noel's Grandmother) 2-28-09

1 cup miller's unprocessed bran
1 cup whole wheat flour
1/2 cup sugar
3 tbsps. molasses
1 cup buttermilk
1 tsp. baking soda
1/2 cup plump raisins

Mix bran, flour and sugar. Dissolve the baking soda in buttermilk. Add to dry ingredients. Add molasses. Stir until mixed. Add raisins. If batter seems too thick, add a little more buttermilk. Makes 12 muffins. Bake at 350° for 25 minutes.

TRICIA NIXON CASSEROLE (1-03-09) 2-28-09

(AKA "Grandma Fran's Casserole)
1 pkg. frozen broccoli (not spears; they are too big)
2 cups cooked and cubed chicken
1 can Cream of Mushroom soup
1/2 cup mayonnaise
1/2 tsp. lemon juice
1/2 tsp. curry powder
1/2 cup shredded cheddar cheese
1/2 cup bread cubes mixed with 1 tsp. - 1 tbsp. butter*

Cook the broccoli and place in the bottom of a casserole dish.  Cover with the cooked and cubed chicken.  Mix the soup, mayo, lemon juice and curry together.  Pour that over the things in dish.  Top with cheese.  In a small skillet melt the butter and add bread cubes.  *It is suggested that you double or triple the amount of bread cubes/butter! Put the buttered bread cubes on top of cheese and bake at 350° for 30 to 40 minutes.
