CHICKEN AND SPINACH QUESADILLA (didn't give http://www.alabamapower.com/recipe/quesadilla.asp) 2-3-07 Top of page

2 flour tortillas - burrito size
1 boneless, skinless chicken breast - cooked and shredded
1 tbsp. olive oil
1 cup mixed Mexican shredded cheese, divided
½ cup chopped frozen spinach, thawed and drained

In large non-stick skillet with heat on medium to medium-high, add: oil, 1 tortilla, ½ cup cheese, chicken, spinach, and remaining cheese. Place the second tortilla on top. With a wide spatula, lift and flip. Some ingredients may come out when you flip; stuff them back in. When tortilla has browned, place on a plate and cut into triangles with pizza cutter.

BIG GAME POPPERS 2-3-07

tube biscuits, not grand size
pizza sauce
shredded cheese
pizza topping of choice

Roll out biscuits individually. Put in muffin tin that has been lightly sprayed. Put 1 tbsp. sauce on each biscuit. 1 tbsp. topping. 1 tbsp. cheese. Bake at 400° for 10 minutes.

SUPER BOWL DIP (1-27-07) 2-3-07

1 lb. velveeta
2 lbs. ground beef, cooked and drained
1 can chili beans, drained
1 8 oz. jar salsa

Mix and put in crockpot, serve with chips.

Suggestion for above Super Bowl Dip: Instead of salsa use a can of Ro-Tel. 2-3-07

OATMEAL COOKIES (75th anniversary cookbook pg 27, 1-27-07)  2-3-07

1 cup margarine
¼ cup sugar
¾ cup brown sugar
2 eggs
1 package vanilla instant pudding
1¼ cup flour
1 teaspoon soda
3½ cups rolled oats
1 cup raisins (optional)

Cream margarine, sugars, eggs, and pudding. Gradually add flour and soda. Stir in oats and raisins. Roll into balls or drop from spoon. Bake at 375 degrees for 10 to 12 minutes. Gretchen Boyd, WMT Account Executive.

OREO COOKIES (made with cake mix 1-6-07) 2-3-07

1 pkg. dry german chocolate cake mix
1 pkg. dry devil's food cake mix
4 eggs
2/3 cup oil

Mix together and roll into small balls. Put on ungreased cookie sheet. Bake at 350° for 10 minutes.

Filling:

1 oz. cream cheese
1 cup butter
3 cups powdered sugar

Cream together and put between cookies. Keep in refrigerator or freezer.

SALTED NUT ROLL BARS (A.J.) 7-10-99) 2-3-07

16 oz. jar dry roasted peanuts
1 can sweetened condensed milk
12 oz. pkg. peanut butter chips
3 tbsps. butter
1 10 oz pkg. mini marshmallows

Put half of the peanuts on bottom of a 9x13" baking dish. In a saucepan, melt sweetened condensed milk, peanut butter chips and butter; stir in marshmallows, but do not melt, pour over the nuts and  spread out evenly; top with remaining nuts. Let bars cool before cutting.

CROCKPOT BONELESS BEEF RIBS 2-3-07

3 lbs. boneless beef ribs
1 cup water
1/2 cup blackberry merlot wine
1/2 cup minced garlic with juice
1/8 cup minced onion
1/2 tbsp. seasoning salt
4 shakes paprika
8 shakes cayenne pepper
1 tbsp. tobasco sauce
1/8 tsp. garlic pepper
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup maple syrup
1/2 cup olive juice
6-8 olives

Cook all night on low. Add in one large onion. 3 medium raw potatoes, cubed. 1 can carrots. 1 can corn. 1 can green beans. Cook thoroughly.

HOT GAME DAY DIP 2-3-07

1 pound hamburger
1 medium onion, chopped
1 can refried beans
1 jar taco sauce
1 can green chilis, chopped
jalapenos to taste
1/2 pound velveeta cheese

Brown hamburger and onions. Put all in a crockpot for 2 hours on high. Uncover and cook 6 hours on low.

PORK LOIN STRIPS 2-3-07

Cut 3/4 inch strips from pork loin and cook a minimal amount of time until the outside is barely brown. Cover with sauce of choice and thin 2-1 sauce to water. Cover and bake in oven.

SALTED NUT ROLL 2-10-07 Top of page

3 cups flour
1 cup butter or margarine
1 1/2 cups brown sugar
1 tsp. salt
1 large can mixed nuts, without peanuts
6 oz. bag butterscotch chips
2 tbsps. butter/margarine
1 tbsp. water
1/2 cup karo syrup

Combine flour, butter, sugar and salt. Mix well. Press into 10x15" pan which is lightly greased. Bake at 350° 10-12 minutes. When base is done, spread 2 1/2 cups or more of nuts over the base. In saucepan, combine chips, butter, water and syrup. Melt and bring to a boil. Boil 2 minutes. Pour over nuts and bake an additional 10-12 minutes. Cool and cut.

SALTED PEANUT CHEWS 2-10-07

Crust:

1 1/2 cups flour
2/3 cup brown sugar
1/2 cup margarine
1 tsp. vanilla
2 egg yolks
3 cups mini marshmallows

Combine all ingredients except marshmallows until crumbly. Press into 9x13" pan. Bake 12-15 minutes. Put marshmallows on top, bake another 1-2 minutes. Let cool.

Topping:

2/3 cup corn syrup
1/4 cup margarine
2 tsps. vanilla
12 oz. bag peanut butter chips
2 cups rice krispies
2 cups salted peanuts

In saucepan, combine first 4 ingredients. Stir constantly until melted. Remove from heat and stir in rice krispies and nuts. Spoon over crust and chill.

FRIED RICE (didn't give may/jun81pg3) 2-10-07

4 cups rice, cooked and drained
4 tablespoons oil
1½ cups roasted beef or pork, or cooked chicken
¾ cup scallions
1 teaspoon salt
¼ teaspoon pepper
2 eggs
½ cup finely chopped parsley
2 tablespoons soy sauce

Cook rice a day before. Let sit in refrigerator. Place oil in skillet. Fry beef or pork. Cut into bite size pieces. Turn cold rice into skillet.
Stir constantly, remove lumps and cook till light brown. Add pork, chicken, or beef, scallions, salt, pepper and cook 1 minute, stirring
constantly. Make dent in rice. Beat eggs and pour into dent. Stir egg mixture till set. Mix into rice. Blend in parsley and soy sauce. Serves
4-6.

ALICE'S NO BAKE CHEESECAKE (6-11-05) 2-10-07

8 oz. pkg. cream cheese
8 oz. container of cool whip
1/4 cup sugar

Whip together and put into cookie or pie crust. Top with cherry pie filling or sliced strawberries. Do not use low fat cream cheese or cool
whip.

PORK CAKE 2-10-07

1 1/2 pounds pork fat
3 cups hot water
5 cups brown sugar
2 tsps. soda
2 pounds raisins
1 1/2 pounds citron
1 pound currants
2 tsps. cloves
2 tsps. cinnamon
1 tsp. salt
8 cups flour
15 oz. chopped pecans

Pour hot water over fat, let stand until cold. Add brown sugar. Mix together other ingredients and add to first mixture. Bake in 4 greased, foil lined bread pans. Bake at 275° for 2 hours. Toothpick test.

SALTED NUT ROLL 2-10-07

1 yellow cake mix
1 egg
1/2 stick margarine

Mix together. Pat in 9x13" pan. bake at 350° for 10 minutes. remove from oven and cover with 3 cups miniature marshmallows. Bake for 5 more minutes.

In microwaveable dish:

12 oz pkg. peanut butter chips
1 stick margarine
1/2 cup white corn syrup

Melt and mix. Add 2 cups rice krispies and 2 cups dry roasted peanuts 1 tsp. vanilla. Mix and pour over marshmallow layer.

CORN FRITTERS 2-10-07

1 16 oz. can whole kernel corn
1 1/3 cups sifted flour
1 1/2 tsps. baking powder
3/4 tsp. salt
2/3 cup milk
1 egg, well beaten
1 1/2 tbsps. cooking oil

Sift together flour, baking powder and salt. Blend milk and egg. Add gradually to dry ingredients. Stir in drained corn. Drop from tablespoon into deep hot fat. 365°-375°. Fry 2-5 minutes and drain on paper towel. Serve with maple syrup.

BEER BREAD 2-10-07

3 cups self rising flour
1/2 cup sugar
1 can beer

Mix ingredients and put in greased loaf pan. Bake at 350° for 60 minutes. Last 5 minutes remove from oven, rub with butter and sprinkle with parmesan.

CORN FRITTERS 2-10-07

2 eggs, beaten
1/2 cup milk
1 cup flour
1 tsp. baking powder
1 tsp. salt
1 tsp. melted fat or cooking oil
1 cup drained whole kernel corn, or fresh corn from cob

Fry like pancakes.

EASY, QUICK PEANUT BUTTER COOKIES 4-24-04

1 box yellow cake mix
2 eggs beaten
1/3 cup water
1 cup crunchy peanut butter

Mix together. Drop by teaspoons on cookie sheets. Bake at 375° for 12 minutes.

1/2 cup milk
1 cup flour
1 tsp. baking powder
1 tsp. salt
1 tsp. melted fat or cooking oil
1 cup drained whole kernel corn, or fresh corn from cob

Fry like pancakes.

MILNOT CHEESECAKE 2-17-07

6 oz. pkg lemon jello
1 cup boiling water
8 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla
13 oz. can milnot
3 cups graham cracker crumbs
1/2 cup butter/margarine, melted

Dissolve jello in boiling water, chill until slightly thickened. Cream the cream cheese, sugar and vanilla. Add gelatin and blend well. Refrigerate milnot for several hours and whip. Mix crumbs and melted butter. Put 2/3 of the mixture in the bottom of a 9x13" pan. Put filling on top. Chill several hours or over night. Put the rest of the graham cracker crumbs and butter over top.

LEMON CHEESE CAKE (may/jun82pg6) 2-17-07

1 can Milnot, chilled
30 graham crackers, crushed
1 stick oleo, melted
1 tablespoon powdered sugar
1 box lemon Jello
1 (8 ounce) package cream cheese
1 cup sugar
1 teaspoon vanilla
1 cup boiling water

Mix crackers, margarine and powdered sugar. Save cup for topping. Place mix in 9x13 inch pan. Dissolve Jello with water, cool. Cream: cheese, sugar and vanilla. Whip Milnot till peaks we formed. Add to cooled Jello and cheese mix. Pour over crumbs. Top with reserved crumbs.

SPINACH SALAD 2-17-07

Dressing:

1/2 cup mayonnaise
1/2 tsp. horseradish
1/2 tsp. hot pepper sauce
1/2 tsp. salt
1/2 tsp. vinegar

Blend.

1 10 oz. pkg frozen chopped spinach, thawed
1/2 cup celery, chopped
1/2 cup onion, chopped
3/4 cup mild cheddar cheese, diced
2 hard cooked eggs, sliced

Drain the spinach. Mix with remaining ingredients. Toss with mayonnaise mixture. Chill and serve as is or on lettuce leaves.

BATTER FRIED FROG LEGS 2-17-07

1 egg
1/2 tsp. salt
2 pounds frog legs
1/2 cup corn meal
1/8 tsp. pepper
1/2 cup cooking oil

Mix egg, cornmeal, salt and pepper together.  Dip frog legs in batter and fry in oil in large heavy skillet for 25 minutes. Turn to brown evenly.

VIENNESE RICE 2-17-07

1/2 cup rice, uncooked
4 oz. can mushrooms
1/4 cup margarine
1 can onion soup
1/2 can water
mushroom liquid

Drain mushrooms, reserve liquid. Brown rice and mushrooms in margarine. Add all other ingredients. Cook until rice is tender and liquid is evaporated.

BEER BREAD (2-10-07) 2-24-07

3 cups self rising flour
1/2 cup sugar
1 can beer

Mix ingredients and put in greased loaf pan. Bake at 350° for 60 minutes. Last 5 minutes remove from oven, rub with butter and sprinkle with parmesan.

BROCCOLI SALAD 2-24-07

1 head cauliflower
2 stalks broccoli
1/2 red onion, chopped
raisins
fried bacon bits or Baco's
3 oz. pkg. sunflower seeds

1 cup miracle whip
1/2 cup sugar
2 tbsps. vinegar

Mix and serve.

PORK CASSEROLE 2-24-07

1 pork loin, cooked and shredded
1/2 cup butter, melted
2 cups ritz crackers, crushed
1 cup sour cream
1 can cream of chicken soup
1/2 cup chicken broth

1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrots, chopped

You can precook the onion, celery and carrots if you're concerned they won't cook in the 30 minutes of baking. Combine butter and crackers. Put 1/2 crumbs in bottom of 9x13" baking dish. Spread pork over cracker base. Add onions, celery and carrots. Mix sour cream, chicken soup and broth. Pour over pork loin. Put remaining cracker mixture over top. Bake at 350° for 30 minutes.

TWO INGREDIENT MUFFINS (sep/oct78pg4) 2-24-07

2 cups self rising flour
2 cups vanilla ice cream, softened

Mix well, spoon into thoroughly greased muffin tins, ¾ full. Bake at 425° for 20-25 minutes. Makes a firm, fine textured muffin. (Add 1 tablespoon sugar for shortcake.)

WHIPPER SNAPPERS 2-24-07

1 package lemon cake mix
8 oz. Cool Whip
1 egg, beaten

Shape into small ball, and roll in powdered sugar. Place on cookie sheet. Bake at 350° for about 10-15 minutes.

1 package lemon cake mix
2 cups Kool Whip
1 teaspoon lemon flavoring
1 egg, beaten
Powdered sugar

Put the first four ingredients into a bowl. Stir until well mixed. Shape into small ball, and roll in powdered sugar. Place on lightly greased cookie sheet. Bake at 350° for about 10 minutes. Be careful not to overbake.

CREME DE MENTHE BROWNIES 2-24-07

1 cup sugar
1/2 cup butter
4 eggs, beaten
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
1 16 oz. can Hershey's syrup
1/2 cup nuts, chopped
2 cups powdered sugar
1/2 cup butter
2 tbsps. creme de menthe
1 6 oz. pkg. chocolate chips
6 tbsps. butter

Mix sugar, 1st 1/2 cup butter, eggs, flour, salt, vanilla, syrup and nuts.  Put into greased 9x13" pan and bake 350° for 30 minutes.  Cool completely.  Mix powdered sugar, 2nd 1/2 cup butter and creme de menthe.  Spread over cooled cake layer.  Melt together chocolate chips and 6 tbsps. butter.  Cool slightly.  Spread over mint layer.  Cover and refrigerate.

NORTHPOLE EGGNOG CHEESECAKE (12-9-99 Jo Anna Lund) 2-24-07

2 8 oz. Philadelphia fat free cream cheese
1 4 serving pkg. sugar free fat free instant vanilla pudding
2/3 cup carnations non fat dry milk powder
1 cup water
¾ cup cool whip lite
1 tsp. rum extract
½ tsp. nutmeg
1 6 oz. keebler shortbread pie crust
4 maraschino cherries halved

In a large bowl stir the cream cheese with a spoon until soft. Add dry pudding mix, milk and water. Whisk until smooth. Blend in ¼ cup cool whip lite, rum extract and ¼ tsp. nutmeg. Spread mixture in the crust. Sprinkle remaining nutmeg over top. Evenly drop the rest of the cool whip lite by tbsps. over top to form 8 mounds. Garnish each mound with the cherry halve. Can refrigerate 2 or 3 days.
