4 cups milk
2 eggs
pinch salt
1 tbsp. vanilla
1 cup sugar
½ cup raisins (can substitute
apricots or other fruit)
3 to 4 slices of bread.
Heat milk set aside. Beat 2 eggs, pinch salt, 1 tbsp. vanilla 1 cup sugar ½ cup raisins (can substitute apricots or other fruit). Add 3 to 4 slices of bread. Stir well and add the warm milk. Bake 375° 30 minutes and stir again and bake another 25 minutes.
ALICE'S SWEET AND SOUR HAM APPETIZERS 2-15-03
2 lbs. ground pork
1 extra large egg
1 cup evaporated milk
2 stacks crushed ritz crackers
2 8 oz. cans tomato sauce
1 cup hickory smoked molasses barbecue
sauce
1/3 cup white vinegar
1 cup packed brown sugar
1 tsp. dried mustard
1 can mandarin oranges, drained
Combine pork, milk, egg, and crackers. Form into meat balls. Put them in an electric roaster or skillet. Mix remaining ingredients, except oranges. Pour sauce over meat balls and top with the oranges. Cook at 350-400°. In a 9x13" pan, 375° and baste.
EASY ITALIAN MEATBALLS (7-10-96) 2-15-03
2 beaten eggs
1 lb. ground beef
1 clove garlic, minced
¼ cup grated parmesan cheese
1 tsp. salt
Combine with wet hands. Roll into 16 meatballs. Brown in 3 tbsps. olive oil.
2 small cans tomato paste
3 tomato paste cans of water
1 tsp. dried basil
1 tsp. salt
dash pepper
½ tsp. sugar
Combine and pour over meatballs. Cover and simmer for 1 hour.

1 pound ground beef (add some pork
if you wish)
1 egg
1 small onion
6-8 crackers crushed
½ tsp. salt
dash pepper
1 tsp. sugar
½ cup water
Form into balls. Bake in oven at 350° or you can fry.
CELEBRITY 4 CHIP FUDGE (12-11-98) 2-15-03
¾ cup margarine
1 can sweetened condensed milk
3 tbsps. milk
10 oz.. peanut butter chips
10 oz.. chocolate chips
11 oz.. milk chocolate chips
1 cup butterscotch chips
Melt ingredients in a saucepan, stirring with a wooden spoon. Add a 7½ oz. jar of marshmallow creme, 1½ tsps. real vanilla, ½-1 tsp. almond extract. Fold in 1 pound walnuts. Mix together and put in a 9x13" pan. Let cool.
SOUP BEANS 2-15-03
1 bag dried great northern beans, soaked in water 6-8 hours. Pour water off, put in dutch oven for on top of stove, or in crock pot. Add 1 ham bone, cover with water. Cook on low, keep beans covered with water, just covering, not too excessive. Cook several hours until beans are soft. Add milk to make creamier. The more often you reheat this soup the better it tastes.

2 20 oz. cans crushed pineapple
½ cup sugar
2 tbsps. flour
3 eggs beaten
4 slices bread, crusts removed, buttered and cubed not
dried
Drain pineapple, reserve 1 cup juice. In a mixing bowl combine pineapple and juice with sugar, flour and eggs. Mix well. Spoon into 2 quart baking dish. Top with bread cubes. Bake at 350° 45-50 minutes or until set and semi-solid.

VANILLA SAUCE FOR BREAD PUDDING (2-17-01) 2-22-03
1 4 serving pkg. instant vanilla
pudding mix
3 to 4 cups milk
Stir milk into pudding mix with wire whisk and sprinkle of nutmeg. Pour over bread pudding.
BANANA BREAD W/COCONUT PUDDING (7-21-99) 2-22-03
2 cups sugar
1 cup vegetable oil
5 eggs
2 cups crushed bananas
2 cups flour
1 tsp. each salt, soda, and cinnamon
1½ cups walnuts
2 3 oz. pkgs. instant coconut cream pudding
Beat sugar and oil. Add eggs and bananas. Stir the dry ingredients into this and add the nuts. Divide the batter into 3 loaf pans. Bake 350° 45-60 minutes.
MAINSTAY MEATLOAF (Joanna Lund Cooking Healthy Across America) 2-22-03
16oz ground 90% lean turkey or beef
½ cup quick oats
¾ cup finely chopped onion
½ cup heinz light harvest ketchup (or any reduced
sodium)
2 tbsps. water
1 tsp. dried parsley flakes
1/8 tsp. black pepper
Preheat oven to 350°. Spray a 9x5 inch loaf pan with butter flavored cooking spray. Combine meat, oats, onion, ¼ cup of the ketchup, water, parsley and pepper. Mix well. Pat mixture into pan. Bake for 30 minutes. Spread remaining ¼ cup of ketchup over top. Continue baking 20-25 minutes. Let stand on wire rack for 5 minutes.
REFRIGERATOR SWEET ROLL DOUGH 2-22-03
1st mixture:
2 cups boiling water
½ cup sugar
½ cup shortening
1 tsp. salt
Mix and let cool.
2nd mixture:
2 pkgs. yeast
½ cup warm water
Dissolve yeast in water. Add to 1st mixture.
3 large eggs, beaten
8 cups flour
Beat 2nd mix into 1st mix. Add eggs and 4 cups flour, stir. Add remaining flour, stir together, do not knead if you are planning to store it. Use a large container because it will rise. Otherwise, knead and shape into rolls. Bake 15-20 minutes at 375° - 400° oven. Drizzle with glaze if desired. The dough will last up to a week in the refrigerator. You can make rolls up right away, let them raise and freeze. Also you can freeze without letting them raise will take longer to raise once you take them out of the oven.
REFRIGERATOR ROLLS apr73pg1 (didn't give) 2-22-03
2 cups lukewarm potato water
1 cup lukewarm mashed potatoes
2/3 cup butter
2/3 cup sugar
1½ teaspoons salt
1 package dry yeast
2 eggs, well beaten
7 cups flour
Bring potatoes to boil. Then measure water. Add mashed potatoes and butter, sugar and salt. When cooled to lukewarm, add yeast and eggs and stir well. Then work in flour. Put in plastic bowl. Grease lid and cover but do not fasten tightly. Place in refrigerator. In one hour beat down. Then beat down as needed and use as needed baking at 350°. Will last for a week if refrigerated.

1¼ cups oil
3 eggs, beaten w/mixer
1¾ cups sugar
1 tsp. vanilla
2¼ cups flour
1½ tsps. cinnamon
1 tsp. baking soda
8 ozs. crushed pineapple, with juice
1½ cups chopped bananas
1 cup chopped apples
¾ cup coconut
¾ cup chopped nuts
Grease and flour the bottom of a 9x13" pan. Mix together the oil, eggs, sugar and vanilla. Sift the dry ingredients; add to mixture. Add remaining ingredients. Bake at 350° for 48 minutes.

8 oz. pkg. cream cheese
¼ cup oil
1 tsp. vanilla
3 cups powdered sugar
Mix oil and vanilla into cream cheese. Add powdered sugar. Mix well.
