BASIC PORK RUB 8-9-08

1/4 cup black pepper
1/4 cup paprika
3 tablespoons sugar
2 tablespoons salt
2 teaspoons dry mustard
2 teaspoons cayenne

Mix all ingredients. Work 1/2 half mixture into meat 12-24 hours before cooking. Apply remaining rub before smoking.

REFRIGERATOR PICKLES (oct72pg4) 8-9-08

Dissolve 2 cups sugar in 1 cup cider vinegar. Pour over 9 cups unpeeled, sliced cucumbers, 2 tablespoons salt, 1 tablespoon celery seed,
1 cup green pepper sliced and 1 cup onions, sliced. Let stand one hour. Put in container and let stand in refrigerator for one to two days.

TACO SQUARES (mar/apr91pg2, didn't give) 8-9-08

2 packages Crescent rolls
1½-2 lbs. ground beef
1 package taco seasoning
½ green pepper, minced
½ onion, minced
2 (8 oz) cans tomato sauce
2 small packages shredded cheddar cheese

Preheat oven at 350° . Roll out one package rolls into a 9x13" ungreased cake pan. Bake for 10 minutes. Sauté hamburger, pepper,
onion, and drain. Add sauce and taco seasoning. Simmer for 10-15 minutes. Pour sauce over crust. Sprinkle with cheese. Unroll and
place second package of rolls on top. Bake 350° for 30-35 minutes. Cut in squares and top with sour cream, lettuce, tomatoes, etc.

PEACH CAKE 8-9-08

In a greased 9x13 put 2 cans sliced peaches, drained. Mix a yellow cake mix. Pour over peaches in pan. Add 1 pkg. butterscotch chips, 1/2 cup nuts, 1/2 cup brown sugar over the top of the batter. Bake at 350° for about an hour until it looks done.

CHEX MIX PUPPY CHOW 8-9-08

9 cup Chex
1 cup chocolate chips
1/2 cup peanut butter
1/4 cup butter
1/4 teaspoon vanilla
1 1/2 cup powdered sugar

Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter. Remove from heat and stir in vanilla. Pour over Chex cereal, put into a large plastic bag with powdered sugar and shake well to coat. Spread mixture evenly on wax paper and allow to cool.

REFRIGERATOR PICKLES  8-9-08

7 cups sliced cucumbers
1 large onion
1/4 cup canning salt
2 cups sugar
1 cup vinegar
1/2 tsp. celery seeds
scant 1 tsp. tumeric
1 tsp. dill weed

Cover cucumbers with water and salt. Let stand at room temperature for 2-3 hours. Drain off salt water but do not rinse. Heat only until dissolved; sugar, vinegar and spices. Put cucumbers in a jar or jars and cover in solution. Put on lids and refrigerate.

KATIE'S BLT POTATO SALAD (Katie Knapp, Cedar Rapids winner of the Good Morning America Emeril's Best Potato Salad Ever contest.) 8-16-08

8 large red potatoes
1 pound bacon
1 large white onion, chopped
2 cups mayonnaise
1 cup sour cream
3 tbsps. milk
6 hard boiled eggs, chopped
2 1/2 cups shredded lettuce
2 large tomatoes
2 cups shredded cheddar cheese

Wash and boil potatoes until tender. Let cool. Chop and cook bacon and onion together until bacon is crispy. Drain grease into a bowl and reserve. In a small bowl, mix maynnaise, sour cream, bacon drippings and milk. In a large bowl, combine potato, eggs, and the bacon-onion mixture. Add mayonnaise mixture to potato mixture and toss. Cover with plastic wrap and refrigerate for 2 to 3 hours. Served topped lettuce, tomatoes and cheese.

MICROWAVE BREAD & BUTTER PICKLES (sep/oct95pg1) 8-16-08

½ tsp. salt
¼ tsp. turmeric
¼ tsp. mustard seed
¼ tsp. celery seed
½ cup vinegar
1 cup sugar
4 cups cucumbers, unpeeled & thinly sliced
1-2 onions, thinly sliced

Combine the first 6 ingredients. Place cucumbers and onions in microwave safe bowl. Pour vinegar mixture over vegetables. Microwave on "high", uncovered, for 5 minutes. Stir well and microwave another 5 minutes. Cool and refrigerate.

FRUIT SALAD 8-16-08

1 can apricot pie filling
1 can pineapple tidbits, drained
1 can mandarin oranges, drained
2 bananas, cut up

Mix and refrigerate after serving. Can also use peach pie filling and cut up peaches and add 2 15 oz. cans of drained fruit cocktail and nuts and marshmallows.

HOMEMADE TOMATO JUICE (didn't give) 8-23-08 Top of page

Some tomatoes are sweeter than others, depending on their ripeness and the variety of tomato. Use the ripest tomatoes you can. Added sugar will balance the natural acidity of the tomatoes, use more or less to taste. Tabasco hot sauce is also to taste, depending on your desired level of spiciness.

3 pounds very ripe garden tomatoes, cored, roughly chopped
1 1/4 cups chopped celery with leaves
1/3 cup chopped onion
2 tbsps. sugar (to taste)
1 tsp. salt
Pinch black pepper
A couple shakes of Tabasco sauce, about 6-8 drops (to taste)

Put all ingredients into a large non-reactive pot (use stainless steel, not aluminum). Bring to a simmer and cook, uncovered, until mixture is completely soupy, about 25 minutes. Force mixture through a sieve, chinoise, or food mill. Cool completely. Store covered and chilled. Will last for about 1 week in the refrigerator. Makes about 1 quart.

EASY TOMATO JUICE 8-23-08

Wash, core, quarter, and cook tomatoes until soft. Add water if tomatoes are not juicy enough. Run through colander or sieve. Pour hot juice into jars and add 1 tsp. salt to each jar.

BLUEBERRY PIE 8-23-08

5 cups blueberries
1/4 cup flour
1/2 tsp. lemon peel
dash salt
2 tsps. lemon juice
1 cup sugar

Make a 2 crust pie and mix dry ingredients with blueberries. Pour into crust. Bake at 425 for 15 mins, then reduce to 350 for 35-40 minutes. Can use peaches instead.

Tips, hints and helps: When making tomato soup, put the tomatoes into the milk and the milk won't curdle. "Red into white and you'll never be blue." You can also add baking soda or flour to the tomatoes to reduce the acidity. If you add baking soda, it will remove the vitamin C content of the tomatoes.(jan/feb78pg3) 8-23-08

Tips, hints and helps: Wash, core and quarter tomatoes. Put tomatoes in a blender and blend until liquid. Can also put tomatoes, onions, peppers and whatever else you want and cook it, then put it into a blender for juice. 8-23-08

Tips, hints and helps: When making Jello, be sure to mix the gelatin with the boiling water thoroughly before adding the cold water, then mix thoroughly again to prevent the rubbery layer from forming on the bottom. 8-23-08

FRUIT SALAD 8-23-08

2 eggs, beaten
3/4 cup sugar
1 lemon, juice and zest (no white part)
1 orange, juice and zest (no white part)
1 20 oz. can of pineapple chunks, drained
16 large marshmallows, quartered, or 2 1/2 cups miniture marshmallows
1 pint cream

Cook beaten eggs and juice with sugar until thick. Allow to cool. Fold in remaining ingredients. May add mandarin oranges as well.

FRUIT SALAD 8-23-08

20 oz. can crushed pineapple, undrained
1 small package of instant vanilla pudding

Mix together and add an 8 oz. carton of cool whip. You can also put in mandarin oranges, bananas, coconut, marshmallows or anything else you'd like.

KIDNEY BEAN SALAD (cooks.com) 7-19-08

2 cans (1 lb. each) kidney beans
1 tbsp. grated onions
1/4 c. pickle relish
1/4 c. ketchup
1/4 c. mayonnaise or salad dressing
Lettuce
3 tomatoes, quartered

Drain beans; combine with onions, relish and ketchup. Add enough mayonnaise or salad dressing to hold ingredients together. Chill. Serve on crisp lettuce; garnish with quartered tomatoes. Makes 6 servings.
