IMPOSSIBLE PIE

1 stick soft oleo
4 eggs
¾ c. sugar
½ c. flour
2 c. milk
1 tsp. vanilla
1 pinch salt

Put all ingredients in blender, mix on high for 30 seconds; pour in greased ten inch pie pan. Bake for 45 minutes at 350 degrees. Variations include: sprinkling with nutmeg, and, or, adding ½ to 1 c. coconut,

ANNA LAMMERS PIE CRUST

3 c. flour
1½ c. Crisco
1 tsp. salt
Blend until like rice.
1 egg (you may need to add water if this is a small egg; you need ½ cup)
1 T. white vinegar
5 T. water

Beat well, add to flour mixture. This mixture can be frozen for up to 6 months. Makes 2 or 3 pie crusts.

A different kind of HOMEMADE POPSICKLE can be made by using fruit juice sweetened with honey (2 T. for each 1½ c. juice). They freeze well and are more refreshing in the hot weather. You may also use any instant pudding for a variation.

THREE LAYER RHUBARB/APPLE DESSERT

Crust:
½ c. butter or margarine
1 cup flour
1 T. sugar

Mix with pastry blender until crumbly and press into 9 x 9" pan. Bake at 350 degrees for 10 minutes.

Filling:
2½ c. cut rhubarb or baking apples, peeled and chopped small.
3 egg yolks
1/8 tsp. salt
2 T. flour
1 c. sugar
rind of 1 orange, grated
1/3 c. cream or half and half

Mix well and pour over crust. Bake at 350 degrees for 45 minutes longer.

Meringue:
3 egg whites, beaten stiff
Gradually add 6 T. sugar, 1 tsp. vanilla, beat all well. Pile on top and bake at 350 degrees for about 15 minutes longer.

SUPPER CASSEROLE

Brown one pound hamburger, drain grease. Add: 1 can drained green beans, 1 can cream of mushroom soup. Blend all in baking dish, then, mix in ½ box of tater tots, remaining half box goes on top of casserole. Bake in 350° degree oven for 30 to 40 minutes.

PRONTO PUPS

1½ c. prepared pancake flour
½ c. cornmeal
2 T. sugar
Enough milk to make batter, approx. 1¼ c.

Dip your favorite brand of wieners into the batter, deep fry in 355 degree fat for 30 seconds. Drain on absorbent paper, then cook in deep fat again for 2 or 3 minutes.

FUDGE RIBBON CAKE

Filling:
2 T. butter or oleo
8 oz. cream cheese
¼ c. sugar
1 T. cornstarch
1 egg
2 T. milk
½ tsp. vanilla extract

Cream butter with cream cheese, sugar and cornstarch. Add 1 egg, milk and vanilla extract. Beat until smooth and creamy and set aside.

Cake:
2 c. flour
2 c. sugar
1 tsp. salt
2 eggs
1 1/3 c. milk
1 tsp. baking powder
½ tsp. soda
½ c. butter or oleo
4 oz. (melted) baking chocolate
1 tsp. vanilla

Combine flour with sugar, salt, baking powder and soda. Add ½ c. butter and 1 c. milk. Blend well. Add the other 1/3 c. milk, 2 eggs, chocolate and 1 tsp. vanilla. Spread half the batter in a 9 x 13" greased and floured pan. Spread mixture with cream cheese over batter (do this carefully). Top with remaining half of batter. Bake at 350 degrees for 50 to 60 minutes.

Cool and frost with:
¼ c. milk
¼ c. butter
6 oz. or 1 c. chocolate chips
1 tsp. vanilla
2½ c. powdered sugar

Bring milk and butter to boil, remove from heat and blend in chocolate chips. Stir in vanilla and powdered sugar. Beat well.

FREEZER CUKES

7 c. thinly sliced cucumbers, peeled
1 c. green pepper, sliced thin
1 c. onions sliced thin
2 T. salt sprinkled over all.
Let set for 2 hours, then, drain and rinse.

Solution for cukes:
1 c. sugar
1 c. vinegar
1 tsp. celery seed.

Heat until sugar dissolves, pour over cucumbers, and freeze. This amount will fill four, 1 pound margarine tubs.

REGIS CHOCOLATE CHIP COOKIES
(Makes a large batch)

3 sticks butter
1 c. Crisco
2 c. brown sugar
2 c. white sugar
4 eggs
2 T. vanilla
7 c. flour
1¼ T. baking soda
¾ T. salt

Put all ingredients in one bowl. Beat until well mixed, then add 1 large package chocolate chips. Bake at 375 degrees for ten minutes.

NICKIE'S LIVERWURST

8 oz. package Philly Cream Cheese
¾ pound smoked braunschweiger
1 T. instant minced onion
2 tsp. WOR sauce
1/8 tsp. pepper
¼ c. undiluted evaporated milk

Mix cream cheese and liver with beater. Add rest of ingredients and mix well. May be kept in refrigerator up to a week. (Optional: 3 to 4 oz. can drained mushrooms).

TO REMOVE BALL POINT INK STAINS: Spray ball point ink marks generously with ordinary hair spray. Work spray into marks with fingers. It will look terrible, but it all comes out in the wash.

KING CRAB

1- 7½ oz. can King Crab, drained
1 T. lemon juice
8 oz. package Philly Cream Cheese
½ c. dairy sour cream
3 T. finely chopped onions
3 T. chili sauce
1 T. worcestershire sauce
3 drops tabasco sauce
¼ tsp. salt
1/8 tsp. garlic powder

Mix and refrigerate.

CROCKPOT APPLE COBBLER

8 tart medium apples
1 c. sugar
Juice and grated rind of 1 lemon
Dash cinnamon
¾ c. butter or oleo, melted
2 c. natural mixed cereal with fruit/and/or nuts such as Heartland or Alpen.

Rub oil lightly on sides of crockpot. Core, peel and slice apples into the pot. Add sugar, lemon, cinnamon and the rind of lemon. Mix cereal and melted butter, add to the pot, and mix thoroughly. Cook on high setting for 3 hours (or on low for 6 to 8 hours). Serve with whipped topping or sour cream, or ice cream. Makes 8 to 10 servings.

COLD OR HOT CHICKEN SALAD

2 c. cut up chicken
2 c. thinly sliced celery
½ c. green pepper
1 c. mayonnaise
½ c. chopped blanched almonds, or crushed shoestring  potatoes, or chow main noodles
½ tsp. salt (unless you use the shoestring potatoes or chow mein noodles)
2 T. grated onion
2 T. lemon juice

Mix together and refrigerate. If you decide to make hot chicken salad, place in greased casserole, cover with 1 c. potato chips and ½ c. grated cheddar cheese. Bake for 15 minutes at 450 degrees.

PORK AND BEANS TO CAN

8 lbs. navy beans
1½ lbs. bacon (or bacon ends)
1 lb. sugar, white
1/3 c. salt
2 c. dark molasses
4 quarts tomato juice
2 quarts water
1½ tsp. cinnamon
½ tsp. pepper

Soak beans overnight. Cook until nearly done and divide beans into 14 quarts. Cook sauce for 5 minutes, pour over beans and cold pack for two hours.

REALLY MOIST MEATLOAF

2 lbs. meat
1 package Pepperidge Farm Stuffing
1 carton sour cream
1 package dry onion soup

HOMEMADE PORK AND BEANS

1 lb. navy beans
¼ lb. salt pork cut in strips
1 tsp. dry mustard
¼ c. brown sugar
2 tsp. salt
¼ c. dark molasses

Cover beans with cold water and soak overnight. Drain water. Cover beans with boiling water and cook 30 minutes. Drain water. Add salt pork, put in bean pot adding some of the salt pork to the top. Mix mustard, sugar, salt and molasses; add to beans. Add ½ c. boiling water, cover pot and bake at 250 degree oven for 6 hours. Add more water if needed, just to keep beans covered. Remove cover during last hour. 8 servings.

BROWN BREAD

1 c. graham flour
1 c. all purpose flour
1 c. cornmeal (yellow)
2 c. sour milk
¾ c. dark molasses
½ tsp. salt
1 rounded tsp. soda

Combine all, add 1 c. boiling water and mix well. Place in cans (soup, juice, vegetable). Fill ¾ full, steam for 3 hours.

CHOCOLATE REFRIGERATOR ICE CREAM

1½ tsp. unflavored gelatin dissolved in 1 c. cold water. Stir and bring to boiling point, the following:
1 c. milk
1½ c. sugar
2 T. cocoa (may use 3 if you like more chocolate flavor)

Dissolve gelatin in hot mixture and let cool. Add 1 tsp. vanilla. Chill until almost set. Whip 1 pint of heavy cream  or Dream Whip, fold into gelatin mixture, put in refrigerator trays and freeze.

FROSTING FOR GERMAN CHOCOLATE CAKE

1 c. evaporated milk
1 c. sugar
3 egg yolks
¼ c. butter or oleo
1 tsp. vanilla
1 1/3 c. flaked coconut
1 c. chopped pecans

Combine evaporated milk, sugar, egg yolks, butter and vanilla in a small saucepan. Cook and stir over medium heat until thick, about 12 minutes. Stir in the coconut and pecans. Beat until thick enough to spread.

COTTAGE CHEESE OSTKAKA

3 c. creamy cottage cheese
¾ c. sugar
5 eggs, beaten
¾ c. flour
2 c. milk
½ tsp. almond flavoring

Combine cottage cheese, sugar and well beaten eggs. Mix flour and milk; add to cottage cheese. Fold in flour and pour into 9 inch pan or casserole. Cook in hot water (as you do for custard). Bake at 370 degrees for 50 minutes. Serve with any desired fruit topping.

ARCADIA IOWA ICE CREAM

 5 eggs
 2½ c. sugar

Beat until of cake batter consistency
Add: 2 tall cans Carnation Milk
2 cartons half and half (or 1 carton whipped cream)
1½ T. vanilla
Put in freezer, and add enough milk to fill container ¾ full.

BETTY DUNCAN'S ICE CREAM DELIGHT

2 c. Rice Chex, crushed
2/3 c. dark brown sugar
½ c. walnuts
½ c. melted oleo, poured over above and stirred thoroughly

Reserve ¾ of a cup for topping  and place the rest in a 9 x 13 pan. Over that ½ gallon slightly softened ice cream. Sprinkle the ¾ c. of topping you reserved, over ice cream. Freeze. Cut in squares.

SPICY TOMATOES

Slice and or quarter tomatoes in shallow dish. You'll need: ½ c. salad oil, 2 T. lemon juice, 1 tsp. minced garlic, 1 tsp. salt, 1 tsp. oregano leaves (may add dash of basil). Mix well, pour over tomatoes, chill in covered dish for at least 2 hours (preferably overnight).

MIKE ROY'S BISCUIT MIX

8 c. flour
¼ c. baking powder
4 tsp. salt
1 c. lard for soft wheat flour, or 1½ c. lard for hard  wheat flour. (Since we usually buy all purpose flour, which is somewhere in between, probably 1¼ c. lard would be a good measure).

Cut in shortening, and keep in  refrigerator. When it's  time to use, add ½ c. milk to each 2 c. mix; mix and knead for 30 seconds,  pat out ¼" thick and cut into biscuit shape. Bake at 450 degrees for 15 minutes.

BISCUIT MIX (WITH DRY MILK)

9 c. sifted all purpose flour
1/3 c. double acting baking powder
1 c. plus 2 T. non fat milk solids
1¾ c. vegetable shortening or 1½ c. lard

You will have 13 cups of dry mix. When time to use, add ½ c. water to each 2 c. mix. Can be used for biscuits, or dumplings, or with the addition of a little poultry seasoning, would go well atop a  chicken casserole.

MACARONI FRUIT SALAD

Dressing: 4 eggs, beaten until light and frothy. Add ½ tsp. salt, two cups sifted powdered sugar, ½ c. Real Lemon Juice. Cook in double boiler until thick and stir constantly. Let cool. 2 c. cooked macaroni, rinsed and cooled. Add 1 c. pineapple cubes, 4 unpeeled diced apples; mix with dressing. Refrigerate for 24 hours. One hour before serving, add 2 c. Dream Whip.

CORN DOGS

1 c. all purpose flour
¾ c. yellow cornmeal
2 T. sugar
1 T. dry mustard
2 tsp. baking powder
1 tsp. salt
1 c. milk
1 egg, slightly beaten
2 T. melted shortening

Combine dry ingredients, then liquid; mix until smooth. Pour into tall glass container. Put wieners on skewers, dip one at a time into batter. Fry until golden brown in vegetable oil, heated to 375 degrees. Drain on absorbent paper. A different kind of entertainment dish could be made by using the cocktail wieners in this manner.

DISAPPEARING MARSHMALLOW BROWNIES

Melt in a 3 quart saucepan:
½ c. butterscotch chips (which is ½ of a 6 ounce  package)
¼ c. butter or margarine

Stir constantly. When melted remove from heat and cool to lukewarm.

Then add:
¾ c. flour
1/3 c. brown sugar
1 tsp. baking powder
¼ tsp. salt
½ tsp. vanilla
1 egg

Stir well until completely blended then add:

1 c. miniature marshmallows
1 c. semi sweet chocolate chips
¼ c. nuts

After completely mixed, spread into a greased 9 inch square pan. Bake at 350 degrees for 20 to 25 minutes,

SEMELROTH FAVORITE ZUCCHINI

Take one, nice size zucchini and remove the ends. Using large bowl, use the big hole on your grater and shred the zucchini, skin and all. Use several cups of grated longhorn cheese and 2 cups of crushed soda cracker crumbs. Now, mince about 3 T. onion, 2 small cloves garlic, ½ green pepper, chopped fine, and cook on stove in about ½ c. water until tender. Salt the zucchini mixture to taste. Add the cooked pepper mixture from the stove. Melt 1 stick of butter, pour over the entire mixture. Then, beat 1 egg very well, add to the mixture. Place in buttered casserole, top with few cracker crumbs, a little grated longhorn cheese and bake at 325 degrees for one hour.

MARIETTA'S SUGARLESS COOKY

½ c. chopped dates
1 c. chopped raisins
½ c. chopped apples
¾ c. chopped nutmeats
1 c. water
½ c. shortening
2 eggs, well beaten
3 tsp. liquid sweetener
1 tsp. vanilla
1 tsp. soda
1 c. flour (or a bit more if needed)

Boil dates, raisins and apples with water for 3 minutes. Cool. Add remaining ingredients and mix well. Refrigerate. Then drop by teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.

GRANNY'S PINEAPPLE CAKE

1½ c. sugar
1 #2 can crushed pineapple plus juice
2 eggs
2 c. flour
1 tsp. soda
1 tsp. salt

Mix above ingredients and pour into a large 9" x 12" greased pan. Before baking, sprinkle over the batter, ½ c. brown sugar and ½ c. chopped walnuts. Bake 45 minutes at 350 degrees.

While cake is baking, mix together: ¾ c. (or 1 small can) evaporated milk and ¾ of a stick of margarine, ½ c. sugar and tsp. vanilla. Then, boil mixture for 1 minute. Take cake from oven, and while still hot, pour mixture over cake. Can be frozen.

CARLEETA'S NEVER-FAIL OLD FASHIONED ICE CREAM

In large bowl, beat well 4 eggs. Add 2 c. sugar, 3 T. vanilla and 4 drops pure lemon. Then add about 2 quarts of milk or cream, so there's enough to make the bowl half full. Beat well. Pour into your freezer can and add milk or  cream until can is ¾ full.

DAVENPORT SALAD DRESSING

1 c. water
½ c. vinegar
½ c. sugar
2 T. cornstarch

Cook to make a base for salad dressing and cool. Pour ¼ to ½ c. milk in blender. Add 1 package Dream Whip and whip for a few seconds. With blender on low, slowly pour cooled base into mixture. Very good with lettuce salad, or, to use with fruit salad add some sugar.

MELT IN YOUR MOUTH CUT OUTS

2 sticks margarine
1½ c. powdered sugar
1 egg
½ tsp. salt
1 tsp. vanilla
2½ c. sifted flour
1 tsp. soda
1 tsp. cream of tartar

Mix in the usual way. These may be dropped by teaspoon or rolled out. Bake at 350 degrees for 8 to 10 minutes. This is a soft cookie.

JEFF DAVIS PIE

2/3 c. brown sugar
2 eggs
1 T. cornstarch
1 T. melted butter
1 pint thin cream (or half and half)
1 tsp. vanilla

Stir together well. Bake in 9" raw crust at 350 degrees for 50 minutes. Pauline Brewer, Martelle, Iowa

VEGETABLE GUMBO SOUP
(can be frozen)

4 c. tomatoes
1 stalk celery, chopped
2 carrots, chopped
2 sprigs parsley
1 green pepper, chopped
1 bay leaf
1 medium onion, chopped
salt and pepper to taste
2 c. okra (diced in approximately 1/8" slices)
1½ c. chopped chicken or meat of your choice
2 c. soup stock
1 wine glass of sherry wine (not cooking sherry)
2 c. water

Let boil for 30 minutes. Add sherry last, and serve piping hot.

Some Zucchini Tips:

Use your blender to grate zucchini and for cabbage slaw.

If you're looking for a 'stretcher' for meat loaf . . . use some grated zucchini . . . you get food value and stretcher combined.

Fried zucchini is great, but if you feel you don't need the amount of oil it takes for the frying . . . try using Shake and Bake... then you only are using enough oil to coat your pan so it doesn't stick.

MOTHER'S FORGOTTEN COOKIES

2 egg whites (beaten stiff)
Add ¾ c. sugar and ½ tsp. vanilla. Then, fold in 1 c. chopped nutmeats, 3 oz. (½ pkg.) chocolate chips.

Preheat oven at 350 degrees for 15 minutes before baking. Then turn oven off. Wait about 30 minutes. Meanwhile, drop cookies by spoonfuls onto wax paper and leave in oven overnight or 24 hours. Simply peel the wax paper from the cookies. (Optional: ¼ c. coconut).

TEFLON CLEANER:
Mix 2 teaspoons baking soda, ½ cup liquid bleach and 1 cup water. Boil in pan to be cleaned five to ten minutes.

RICHARD'S RASPBERRY CHIFFON PIE

1 ten oz. package frozen red raspberries, thawed
1 three oz. package raspberry flavored gelatin
¾ c. boiling water
2 T. lemon juice
½ c. Dream Whip
2 egg whites
1/3 tsp. salt
¼ c. sugar
1 9 inch baked pastry shell, cooled

Drain raspberries and add water to make 1/3 c. liquid. Dissolve gelatin in boiling water; add lemon juice and raspberry syrup. Chill, stirring occasionally until mixture is partially set. Beat mixture until soft peaks form. Fold in raspberries and Dream Whip. Add salt to egg whites and beat until soft peaks form; add sugar gradually, beating  until stiff. Fold in raspberry mixture. Pour into pastry  shell. Trim with Dream Whip and chill.

ESTHER'S FLAT CHEESE PENNIES

¼ lb. butter, softened
½ lb. grated sharp cheddar cheese
½ pkg. of Lipton's Dried Onion Soup Mix
1½ tsp. salt
1 c. flour

Cream together the butter and the cheese. Work in flour, salt and onion soup mix; mix well. Form into 1" thick roll. Refrigerate roll several hours overnight. Slice into ¼" rounds. Bake on ungreased cookie sheet at 375 degrees for 10 minutes. You may also freeze these. Makes good snack.

Aluminum beer cans: to Cimino Distributing Company, 620 First St. SE, Cedar Rapids . . . Saturdays from 8:00 a.m. to noon.

SLICED DILL PICKLES

1/8 tsp. alum in quart jar
1 clove whole garlic
2 heads fresh dill (or dill seed in box)
1 hot red pepper, or banana pepper
Pack the slices into the jars.

Make hot solution of:
1 c. coarse canning salt
3 quarts water
1 quart cider vinegar
2 grape leaves in each jar

Will cover 6 to 8 quarts of whole pickles.

OLD FASHIONED HOMEMADE ICE CREAM

Heat 1 quart of milk to scalding and set aside to cool. Then, add 6 well beaten egg yolks. Stir in a mixture consisting of 3 cups sugar, 3 T. flour and 1 pinch  salt. Beat the six egg whites until stiff. Fold into first mixture. Cool. When ready to freeze, put mixture into ice cream freezer, add 4 T. vanilla, 1 can Eagle Brand Condensed Milk; 1 quart cream and enough milk to fill freezer to ¾ full. Freeze as normal.

HOMEMADE ICE CREAM

3 T. cake flour (or 2 T. regular flour and 1 T. cornstarch)
3 c. sugar
1-1/3 tsp. salt
3 eggs
3 quarts light cream
5 T. vanilla
6 cups milk

Mix flour, sugar, salt, add slightly beaten eggs, add milk gradually. Cook until it reaches boiling, hen, strain and let cool. Add vanilla and cream.

ICE CREAM
(made in freezer of your refrigerator)

1 cup double cream (whipping cream)
1 c. rich milk or whole cream
1 tsp. gelatin (unflavored)
6 T. sugar
2 egg whites
1/16 tsp. salt
½ tsp. vanilla

Soak gelatin until soft in a little of the milk or cream. Heat remainder and pour over gelatin. Add sugar, stir until dissolved, put mixture in refrigerator to chill. Whip double cream. When gelatin mixture has thickened slightly, beat to incorporate air, add vanilla and fold in whipped cream and well beaten egg whites. Freeze. Makes 4 cups. A variation: Add one ounce unsweetened chocolate and 8 T. sugar to milk when heating.

ORANGE SHERBET

Juice and pulp of 3 oranges
Juice and pulp of one lemon
Small can crushed pineapple
2 c. sweet milk
1 c. sugar

Mix all together, add milk last, stir well and freeze.

MILE HIGH STRAWBERRY PIE

2 egg whites
1 package (10 oz.) frozen sliced strawberries, thawed
1 tsp. lemon juice
1 tsp. vanilla
¾ c. sugar
Few drops red food coloring
½ pint whipped cream or
1 package Dream Whip, prepared
1-10" graham cracker crust

Beat first five ingredients for 20 minutes in large bowl, at high speed. Fold in food color and whipped cream. Pour into crust and freeze.

From a Listener From Iowa City
If you have the problem of lime in a tea kettle, there is a product called Lime Away....once it's cleaned out, if you put a Curly Kate, the steel pan scratcher from the grocery store, in the tea kettle, you'll never have lime again, it will all go into the steel ball and you can just throw it away when it gets full.

MOCHA BALLS

2 sticks butter
½ c. sugar
2 tsp. vanilla
1¾ c. flour
¼ c. cocoa
1 T. instant coffee
½ tsp. salt

Blend in 1 c. nutmeats and ½ c. maraschino cherries, shape into balls, bake 20 minutes in 325 degree oven.

COFFEE COOKY

Cream together until fluffy:
½ c. shortening
2/3 c. sugar
2 T. instant coffee
Add:
1 egg, slightly beaten
¾ c. flour
¼ tsp. salt
½ tsp. vanilla
½ c. chopped nuts

Mix well, put on cooky sheet by teaspoonfuls. Bake until edges are firm, tops are dry, approximately 10 to 12  minutes at 350 degrees. From a Listener in Iowa City.

ZUCCHINI CASSEROLE (Top of Stove)

2 pounds hamburger
3 onions
1 green pepper
5 fresh tomatoes
4 medium zucchini
1 can mushrooms
salt and pepper to taste
1 T. sugar

Sauté hamburger and onion, add rest of ingredients, prepare on top of stove, let simmer  for ½ hour. This dish can be frozen or canned, if you eliminate the hamburger and mushrooms.
